Strawberry Mango Vegan Creamsicles – Whitney E. RD


These strawberry mango vegan creamsicles are so easy to make and only require four ingredients.

We may be heading into fall, but here in L.A., the summer heat is still going strong. And since hot days call for cool treats, I’ve been busy in Whit’s Kitch coming up with delicious, nutritious frozen concoctions.

My usual frosty favorite is simple Banana Nice Cream, but I wanted to create something that I could make in advance to enjoy at a moment’s notice and that used something other than bananas for once.

I’ve been really into Kite Hill’s dairy-free products lately. Their food scientists are pretty darn talented. From cream cheese to ricotta, their almond-based alternatives taste almost identical to the real thing.

After falling in love with those staples, I was stoked to learn they make yogurt as well and immediately started dreaming up ways to turn this creamy product into a frozen dessert.

I spotted their organic almond milk yogurt while shopping on Milk & Eggs recently – a new online grocer that delivers your goods straight to your door.

Milk & Eggs is a pretty cool concept. They are a farm-direct service, meaning they cut out the middle man and bring food straight from the source to your door, which decreases shelf/transit time and increases freshness. There is no charge for delivery and you’ll actually be reducing your carbon-footprint by decreasing the number of cars on the road going to and from the grocery store.

But back to these vegan creamsicles. They couldn’t be easier to make. All you have to do is pick your favorite summery fruit, and then blend it up with the yogurt and a drop of maple syrup (or sugar of choice).

I chose my two summer favorites – strawberries and mango – for a sweet, tangy, vitamin-C loaded treat.

With healthy fat and protein from the almonds and fiber from the fruit, these vegan creamsicles make a delicious, balanced snack for kids and adults alike.

Vegan Strawberry Mango Creamsicles

 

These vegan creamsicles are quick and easy to make and require only 4 ingredients!

Serves: 6

Ingredients

  • 1 cup strawberries
  • 1 cup mango
  • 1 cup plain dairy-free yogurt
  • 1 tablespoon maple syrup (or sugar of choice)

Instructions

  1. Combine all ingredients in a blender.
  2. Pour into a popsicle mold.
  3. Freeze for at least 4 hours.
