Make this creamy artichoke white bean dip for a healthy, flavorful snack or appetizer. This easy, vegan, gluten-free dip is made with canned artichokes, white beans, and roasted red peppers, plus a perfect blend of herbs for a satisfying and nutritious appetizer.


  • 1 14-ounce can artichokes, packed in water
  • 1 (15-ounce) can white beans, rinsed and drained
  • ½ lemon, (about 1 tablespoon) and zest (about 1 teaspoon)
  • 1 clove garlic
  • 2 tablespoons nutritional yeast
  • ½ teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • ½ (16-ounce) jar roasted red peppers
  • ¼ medium red onion, finely diced
  • ¼ cup fresh basil, chopped (or 1 teaspoon dried)
  • Salt to taste


  1. Drain artichokes thoroughly through a colander, and reserve liquid. Chop artichokes into small pieces. Add to a medium mixing bowl.
  2. Place rinsed, thoroughly drained white beans in a food processor container. Add lemon juice, zest, garlic, nutritional yeast, and black pepper. Blend while adding olive oil and if needed, reserved artichoke liquid, to make a very thick texture (it will loosen the texture when other ingredients are added, so make sure to add only enough liquid to make a thick texture). May stop to scrape down sides if needed. Transfer the white bean mixture to the mixing bowl with artichokes.
  3. Drain the roasted red peppers thoroughly through a colander. Chop roasted red peppers into small pieces. Add to the mixing bowl.
  4. Add red onion and basil to the mixing bowl. Gently mix. Season with black pepper and salt as desired.
  5. Serve immediately or chill with crackers or vegetables as an appetizer or dip. Makes 10 servings (about 1/3 cup each).
