Method

  1. Preheat the oven to 425 F and prepare a large baking sheet with the oil and place it into the oven.
  2. Wash the potatoes well and use a box grater to shred the potatoes and onion.
  3. Transfer the shredded potatoes and onion to a clean dish towel and wring out all the water.
  4. Let it sit for 5 minutes and then wring it out again until all the liquid is gone.
  5. Add the drained potatoes and onion to a mixing bowl along with the egg, crushed chips and saltand pepper. Use your hands to combine.
  6. Remove the baking sheet from the oven and use an ice cream scoop to make 12 mounds.
  7. Press the mounds flat using a spatula.
  8. Bake for 13-15 minutes, flip and bake for an additional 5 minutes.
  9. Serve with sour cream and chopped green onion if desired.

High hopes for women’s world record holder at London Marathon

As many of us still sit in awe of the women’s race at the 2024 Boston Marathon, it’s easy to forget that there’s another Abbott World Marathon Major this weekend in London. The race will be just as important as the last, with women’s marathon world record holder, Ethiopia’s Tigist Assefa, headlining an extremely deep women’s field, with high stakes, Olympic selection and potentially a world record on the line.

For Assefa, this will be her fourth career marathon and her first time running a major not named Berlin. Assefa has won the last two editions of the Berlin Marathon, setting unprecedented times in both victories–2:15:37 (2022) and her world record, 2:11:53 (2023). The biggest questions for Assefa from journalists at Thursday’s press conference was what sort of shape she was in and how she will fare on the London course.

“Whether it’s Berlin or London, my strategy stays the same,” said Assefa. “I came to London to win, and I’m in record shape.”

The women’s field is targeting the women-only marathon world record of 2:17:02, set by Mary Keitany at the 2017 London Marathon. (The women-only category refers to a race where women run without any male athletes in competition or as pacers, which is the case in London, since women and men start at different times.

The women’s field is loaded with talent, including the reigning Olympic champion, Peres Jepchirchir, and the former world record holder, Brigid Kosgei. Besides Assefa, Kosgei will be one of the favourites, previously winning the London Marathon twice (in 2019 and 2020). Since then, her best marathon major finish was a 2:16:02 in Tokyo in 2022, and most recently, a fourth-place finish at the New York City Marathon last November.

As previously noted, the stakes are high for Jepchirchir and Kosgei, with Olympic team selection on the line. A win here in London could go a long way, cementing an athlete’s spot on Team Kenya for Paris. There’s added pressure for both women to perform, with Hellen Obiri and Sharon Lokedi going one-two at the Boston Marathon last weekend. All four women, plus former world champion Ruth Chepngetich are on the shortlist for potential selection. The deadline for national sporting organizations to select their marathon teams is May 5.

There are no Canadian elites in this year’s London Marathon women’s field, with Malindi Elmore now shifting her focus to Paris, and others racing in the next couple of weeks to chase the Olympic standard of 2:26:50.

Outside of the favourites, the Ethiopian trio of Yalemzerf Yehualaw (2:17:23), Tigist Ketema (2:16:07) and Megertu Alemu (2:17:09) are three athletes who could steal the win from their compatriot Assefa. Yehualaw, the current women’s 10K world record holder, has previously won London (in 2022) and has the legs to bounce the favourites in the closing stages. For Yehualaw, London is also an opportunity to impress the Ethiopian Olympic selection committee just a few weeks before they have to pick their team for Paris.

How to watch

If you are looking to stream the 2024 London Marathon from Canada on Sunday, the race will only be available on FloTrack. The elite wheelchair races will begin at 4:15 a.m. ET, followed by the elite women’s race at 4:30 a.m. ET and the men’s race and mass start at 5:00 a.m. ET.

Further to yesterday’s post, you may have noticed a lurker in the background of one of the photos:

This is because Yonkers is rife with deer, and they fear no man:

In fact this one actually started to approach me, and for a minute there I thought it was going to come up and sniff my crotch like a dog.

The trails just north of the city are full of such wonders, and for a time my favorite deer-slayer was the RockCombo, which was more or less in its stock configuration when I first received it in 2020:

It grew on me quickly, and over time it became my “ready for anything bike:”

Then came The Great Purge of 2024, and the difficult decision to pass it along, since it overlapped with the Homer in particular:

Yes, the RockCombo had more mountain bike in it, but for that I have the Jones.

I was sorry to see it go, but I do still have its offspring, which will have a new rider once my younger son grows into it:

I may have to give it a “Rivendell Junior” treatment with some swept bars.

I also get to see the RockCombo every once in awhile when it pops up in the comments, as it did yesterday:

As you can see its new owner has elevated it to a new level of elegance and sophistication it would never, ever have attained under my curatorship.

It’s enough to make me want another one…or at least check out what they’re going for:

The RockCombo is often cited as the first gravel bike:

However, this can’t be true, because if it was then Specialized would be suing all the other companies selling gravel bikes the same way they sued that guy who named his cafe Roubaix:

In any case, seeing the RockCombo again made me nostalgic for it, and in my subsequent pokings around I found a contemporary review of the bike I’d never seen before:

1989 was quite a year.

Of course the hybrid concept soon evolved into something tamer; for example, the drop bars disappeared, and if anything it’s the lack of drop bars that has since come, at least in part, to define the hybrid. But the way hybrids were described in 1989 is exactly the way we describe a certain type of bike beginning with “g” today:

I shared this fun, flavorful stuffed chicken recipe 5 years ago and it’s still SUCH a hit with all of you. I hope you’re ready to get cooking in the kitchen and dancing while you do it.

What could be better than this easy goat cheese and spinach stuffed chicken breast recipe that’s made in one pan, takes only 30 minutes, is packed with protein, and is absolutely delicious?!

I paired this delicious spinach stuffed chicken with caramelized onions and mushrooms to give it extra savory flavor and OMG the result is out-of-this-world amazing. Feel free to serve the chicken as is or check out some of my favorite sides for pairing at the bottom of this post!

Ingredients in this goat cheese and spinach stuffed chicken

The best part about this easy spinach stuffed chicken recipe is that it requires minimal ingredients but the result is so delicious and feels a little fancy. Here’s what you’ll need:

  • Chicken: we’re cooking up 4 boneless skinless chicken breasts for this recipe. Be sure they’re similar in size, about 4-6 ounces each.
  • Olive oil: you’ll need this for cooking up the chicken and veggies.
  • Vegetables: we’re using fresh spinach, an onion, and baby bella mushrooms in this recipe.
  • Cheese: I love adding tangy goat cheese to the spinach mixture, but see below for additional options!
  • Herbs & spices: you’ll need some garlic powder, fresh thyme, salt & black pepper. Looking for a kick of heat? Add some red pepper flakes to the filling!
  • Optional: if you want to add a little deeper flavor get your balsamic vinegar ready for the onion and mushrooms.

Customize with your favorite cheese

Instead of goat cheese, I think cream cheese or shredded mozzarella cheese would be delicious mixed with the spinach! Just be sure to use a cheese that gets nice and creamy. You could also add a little parmesan cheese to the filling for extra savory, salty flavor!

Goat cheese and spinach stuffed chicken in 5 easy steps

This spinach stuffed chicken recipe is easier to make than most stuffed chicken breast recipes because instead of having to butterfly and pound a chicken breast down, you simply cut the chicken ‘hasselback style’ on top, stuff it with cooked spinach and goat cheese (or cheese of choice), then bake it in the oven and you’re done. Here’s how to make stuffed chicken breast:

  • Prep your chicken. Use a sharp knife to cut 6 slits into the top of each chicken breast, making sure you don’t cut all the way through to the bottom of the chicken breast. Drizzle each chicken breast with a little olive oil then season with salt and pepper.
  • Make the stuffing. Cook the spinach filling and then add to a bowl with goat cheese to combine the mixture.
  • Stuff the chicken. Add cheese and spinach filling the slits in the chicken breast.
  • Caramelize the onions. Cook your onions & mushrooms in the same skillet until the onions begin to caramelize, then make room for the chicken in the skillet.
  • Bake & serve. Bake until chicken is completely cooked and a meat thermometer reads 165 degrees F, then serve it up!

How long do you cook stuffed chicken?

Since chicken breasts tend to vary in size, I recommend using a meat thermometer to make sure that the chicken breast is fully cooked; the temperature should read 165 degrees F. Typically, I cook my chicken breasts at 375 degrees F for anywhere from 20-30 minutes depending on their size.

Tools you’ll need: I recommend an oven-safe skillet and a meat thermometer for this recipe. No need for toothpicks as we’re not butterflying the chicken breasts so you won’t need them to hold the chicken together!

Storing tips

  • In the fridge: store any leftovers chicken in an airtight container in the refrigerator for up to 3-5 days.
  • In the freezer: let the chicken completely cool, then wrap them well with plastic wrap and tinfoil before transferring them to the freezer for up to 3 months. No need to thaw, simply reheat the chicken in the oven at 325 degrees F for 20-30 minutes until heated through.

Goat cheese & spinach stuffed chicken breast make an amazing keto-friendly and low carb dinner! These baked chicken breasts are easily cut “hasselback style,” stuffed with creamy cheese & nutritious spinach, and served with caramelized onions and mushrooms for the ultimate healthy dinner.

Ingredients

  • 4 chicken breasts (about 4-6 ounces each)
  • 2 tablespoons olive oil, divided
  • 4 cups organic spinach
  • ½ teaspoon garlic powder
  • 2 ounces goat cheese
  • 1 white onion, sliced
  • 8 ounces sliced baby bella mushrooms
  • 1 teaspoon fresh thyme
  • Optional: 1 tablespoon balsamic vinegar
  • Freshly ground salt and pepper

Instructions

  • Preheat oven to 375 degrees F. Use a sharp knife to hasselback each chicken breast, and cut 6 slits into the top of each breast, making sure you don’t cut all the way through to the bottom of the chicken breast. Drizzle each chicken breast with a little olive oil then season with salt and pepper. Set aside.

  • Place a large ovenproof skillet over medium high heat and add in ½ tablespoon of olive oil. Add in spinach and season with garlic powder. Cook, stirring occasionally until spinach is fully wilted. 

  • Transfer cooked spinach to a medium bowl and add in goat cheese. Stir until well combined. Stuff each slit with the spinach/goat cheese mixture.

  • Next add a 1 tablespoon of olive oil to the same skillet. Add in sliced onions, mushrooms, fresh thyme, optional balsamic vinegar and season with a little salt and pepper. Saute until onions begin to caramelize and mushrooms turn golden brown. Make room for the chicken by moving the mushrooms and onions to the sides of the skillet. 

  • Add chicken to the skillet, making sure there is a little bit of room between each chicken breast; you may need to rearrange the mushrooms and onions. Transfer to oven and bake for 20-30 minutes until the chicken is fully cooked and meat thermometer reads 165 degrees F. Serves 4.

Recipe Notes

Feel free to use cream cheese instead of goat cheese. If you use cream cheese you might want to add in 1/4 cup mozzarella mixed in there.

Hey, Procrastinator: Even You Can Harness the Power of Time Magic

It’s the one thing we never have enough of: that ancient and non-renewable resource, time. Behold, though, two new time magicians on the scene to help you turn that slippery stream of time down the drain into something more viscous and meaningful. Meet Melissa Ambrosini and Nick Broadhurst, authors of Time Magic, a resource that not only shares methods on amplifying creativity and honing your productivity, but also incorporates wellness tips on making the life you’ve got… the best one possible. Melissa took the time (pun intended) to share with us her inspiration in penning the project with her husband, tips for getting started, and some of her favorite time management hacks.


Wanderlust: Your book is chock full of totally accessible, and easy-to-enact methods that take the friction out of so many daily tasks. But as you well know, humans almost always opt to keep doing things the way they’ve been doing them, despite knowing that a habit shift might reap rewards. What do you say to folks who have the reluctance for that first output of effort to make change, whether that’s downloading a new task management app, or adopting a new mindset? How would you encourage them to get over that first hump, and into a new lane?

Melissa Ambrosini: If you’re feeling reluctant to make a change, it’s important to acknowledge your feelings and not beat yourself up. Change can be challenging and uncomfortable, so it’s perfectly natural to feel some resistance to it at first. At the same time, change can also lead to personal growth and evolution. It’s the bridge from where you are now to where you want to be, so it’s worth persisting!

melissa ambrosini bookmelissa ambrosini bookGetting your mindset right can be a very helpful first step (which is why we spend a whole chapter on it in the book). In particular, adopting a growth mindset is critical. This means having an integrated understanding that your skills in this area are not fixed, they can improve. Research shows that having this mindset can radically increase your odds of successfully creating change.

Another helpful tip is to start with a habit or skill that appeals to you or that plays to your natural strengths, and to break it down into manageable chunks. So start small, and when you start to stack up some wins, you can slowly add in more and more shifts.

WL: You and Nick have a varied and deep background exploring wellness and guiding your community to optimizing their lives. What was the moment when you realized that crystallizing your learnings into a book focused on time management would be the most potent way to distill your magic?

MA: If you’d told either of us a few years ago that we’d one day write a book about time and how to spend it, we probably would have had a good giggle. After all, we weren’t good with time! And we never had enough of it—Nick was a single dad headed towards burnout with zero time for his son, while I was an overwhelmed people-pleaser whose time was always eaten up by other people’s priorities.

When our relationship began more than a decade ago, so too began our journey of changing our relationship with time—not just so that we could “get more done”, but also so that we could create a spacious life that allowed plenty of time for the activities and people we love.

Eventually, we got so good at optimizing our time that the people around us (friends, family, followers) began asking us “How the heck do you do it?!” 

We didn’t realize we were doing anything special, but they could see that we were getting superhuman amounts of work done while still having a joy-filled, meaningful life.

So after getting asked that same question again and again, we finally realized we needed to capture all the tools and techniques that had become second nature to us in one place, so that others could benefit from them too. So that’s when the idea for Time Magic really took hold.

WL: Focus (and honing skills related to focus) are a recurring theme in the book. It feels particularly important for this digital generation, growing up in a world of technology and notifications, to practice discernment and learn how to bring their attention to one thing. What advice do you have for parents, teachers, and caregivers around the best method(s) to help littles flex the muscle of focus?

melissa and nick time magicmelissa and nick time magicMA: Our daughter is two. One of the ways we build the skill of focus with her is to not interrupt her self-directed play. If you start paying attention to this, it’s actually quite funny how often we, as adults, feel the need to insert ourselves into our children’s solo play. It’s usually done with the best of intentions, but one unfortunate side effect is that it can break their flow and stifle them from building the all-important skill of focus. So of course, we do plenty of play with our daughter, but if she’s doing something on her own, we do our best to not splinter her concentration and let her explore the world in an uninterrupted way.

WL: What’s the one single time-saving hack that’s made the biggest difference in your life? 

MA: The one, single time-saving hack that’s made the biggest difference in my life is the deep understanding that how we spend our days is how we spend our lives. It was a huge turning point for me when I truly understood that life isn’t just about the big moments and the ‘important’ days; life is now, in the random minutes and hours we are gifted every day. It is incredibly empowering when you finally get, on a heart and soul level, that by being intentional with how you spend small units of time (your minutes, hours and days), you can change how the whole of your life plays out, and ensure that you’re creating a life that’s aligned with your highest values and vision.

On a more specific level, the productivity system we developed—Tick or Flick™—has freed up so much mental bandwidth, taken so much stress off my plate, and ensured that I get the right things done each day. It’s an epically powerful system that’s elegant in its simplicity. If your brain feels overwhelmed, or if you find yourself forgetting tasks or missing deadlines, I highly recommend giving it a shot!

WL: You and Nick worked together to write this book, so clearly you align on the best ways to make the most of your time together as partners. How important is it for someone’s principal partners (spouse, business partner, co-parents, roommates, etc) to get on the same page with these methodologies?

MA: It obviously makes life easier when you’re on the same page as your spouse, colleagues or boss about your approach to things like time management, planning and organization. But if they have different views from you, don’t let that stop you from taking action. There are so many habits and techniques you can implement by yourself to enhance and optimize your time, so take action and lead by example. (When they see how much you’re getting done, and with so little stress and fuss, you might just convert them!)

That said, people are allowed to have different approaches and there is no one size fits all. When you encounter a situation where differing approaches are resulting in tension, harness the power of what I call ‘CCC’ — Crystal Clear Communication. Communicate openly, transparently and without ego to ensure that everyone is clear on their responsibilities and timeframes, even if they’re using different methods to reach the finish line.

    New Research Indicates How Cholesterol Types Impact Heart Disease Risk

    Cholesterol is one of the primary factors analyzed when researching heart disease — HDL (healthy) cholesterol to indicate protection, and LDL (lousy) cholesterol to indicate a higher risk. A recent review of previous studies shows that it’s actually more complex than knowing your numbers.

    People who may be at risk for heart disease should ask their doctors for a blood test measuring for LDL and HDL cholesterol, non–HDL-cholesterol, and cholesterol particle size. By learning your cholesterol details, you can work with your doctor to create a plan to lower your chances of getting the disease.

    But what else can you do to mitigate your risk of getting heart disease?
